Cream Cheese Pancakes

Ingredients


  • 2 tbsp cream cheese softened
  • 2 eggs
  • 1/2 scoop vanilla flavoured low carb protein powder
  • 1 tsp baking powder (optional)

Instructions


1. Blend softened cream cheese with protein powder mixed with baking powder. 
2. Mix in eggs until well mixed.
3. Pour batter onto a well greased frying pan.
4. Flip when bubbles form.
5. Let cook through before removing from pan.

Notes


Serve with butter and sugar free syrup.

Chicken Crust Pizza

Ingredients



  • 1 lb ground chicken
  • 1 egg
  • 2 tbsp crushed pork rinds
  • mozzarella cheese shredded
  • 2 tbsp tomato sauce
  • toppings: olives, pepperoni, mushrooms

Instructions


1. Mix ground chicken with egg and crushed pork rinds.
2. Spread the mixture in a thin circle onto a pizza pan and bake for 15 minutes in a 350 degree oven.
3. Spread the tomato sauce on top, add half of cheese, all of toppings and remainder of cheese.
4. Bake again at 350 degrees for another 10 minutes.

Notes


Add whatever toppings you wish. You could also use a boneless skinless chicken breast, pounded thin to make your crust or substitute any ground meat you wish such as turkey, beef or pork.


Mushroom Lasagna

My favourite dinner of all time.

Ingredients

  • 2 lbs ground beef
  • 1 can tomato sauce
  • 3 cups sliced white or brown mushrooms
  • 6 portobello mushroom caps, 1/2 inch slices
  • 1 onion diced
  • 2 tbsp ghee
  • 2 cups frozen chopped spinach thawed
  • 2 eggs
  • 2 cups cottage cheese
  • 2 cups shredded mozzarella cheese
  • salt, pepper, oregano, basil

Instructions


1. saute mushrooms and onions in ghee
2. cook ground beef in a frying pan
3. add can of tomato sauce and spices to ground beef
4. in a separate bowl combine well drained spinach, cottage cheese and eggs. Mix well.
5. place half of ground beef mixture into bottom of a large casserole dish
6. spread half of mushrooms on top.
7. spread half of mozzarella cheese
8. spread entire spinach and cottage cheese mixture
9. add remainder of mushrooms
10. spread remainder of ground beef mixture
11. place casserole dish into a 375 degree oven for 45 minutes
12. remove from oven and sprinkle remainder of mozzarella cheese to cover
13. place back in oven for 5 minutes or until cheese is melted
14. remove from oven and let lasagna sit for 10 minutes prior to serving

Notes


Your lasagna may be too runny if you don't saute mushrooms long enough and drain spinach thoroughly.

Flax Bread

A quick and easy way to make bread or wraps when you need a sandwich.

Ingredients

  • 2 tbsp Ground Flax Meal
  • 1 tbsp Ground Psyllium Husk
  • 1-2 eggs
  • 1 tsp spices of your choice

Instructions

  • Mix above ingredients. If you wish to make a thinner, larger bread to use as a wrap then use 2 eggs or egg whites so it is runnier.
  • Pour into a non stick or greased fry pan at medium heat and cook for approximately 2 minutes on each side or until golden brown.

Notes

This recipe can be modified to be savoury or sweet depending on the spices you add to it. I've done garlic and turmeric and I've also used nutmeg and cinnamon. You can also add some flavoured protein powder to create more of a healthy pancake!
